Chocolate Ganache Crepe Cake with Strawberries


This is how I say "Happy Birthday" to my hubby- luscious layers of chocolate ganache and sliced strawberries in between layers of light fluffy crepes. This truly decadent cake was a hit at my husband's birthday dinner. 
This cake was a nice change from the traditional birthday cake and was closer to a torte because of the rich filling.  This cake is rustic enough for country living with imperfect layers of crepes, but a touch of sophistication  is added with the smearing of the deep dark chocolate ganache.  For a lighter take on a crepe cake I would try girl.Inspired's Lemon Crepe Cake or Olga's Flavor Factory Crepe Cake with Pastry Cream and Raspberries

Because I was feeding a crowd, I doubled the crepe recipe and used a larger pan in order to have larger crepes.  If I was doing this for the family, it would be more impressive to use a smaller pan for smaller crepes but a larger stack  for the cake.  Regardless, it was delicious and easy.

If you have not tried to make crepes before, just go for it.  It is not as hard as it seems and they are a family favorite.  Anything with eggs is a staple in our house with our prolific hens

Step 1:  Make the batter

Step 2: Slice the strawberries




Step 3: Make the Chocolate Ganache


Step 4: Make the crepes
Step 5: Layer


Step 6: Let Chill for as long as you can stand it!
